Banana Bread Recipe

Ingredients:

– 2 1/2 cups all-purpose flour
– 3 ripe bananas, mashed (about 1 1/2 cups)
– 5 tablespoons coconut oil or butter, melted
– 3 eggs, beaten
– 1 teaspoon ground cinnamon
– 1 teaspoon baking soda
– 1/2 cup organic sugar
– Pinch of salt
– Optional add-ins: chopped nuts, dried fruit, chocolate chips

Instructions:

1. Preheat oven to 350°F (175°C). Grease a 9×5 inch loaf pan.
2. In a large mixing bowl, combine mashed bananas and melted coconut oil or butter.
3. Sprinkle baking soda over the mixture and add a pinch of salt. Let it sit for a few minutes to activate.
4. Add flour, cinnamon, eggs, sugar and any desired add-ins to the bowl. Mix until just combined.
5. Pour batter into prepared loaf pan.
6. Bake for 45 minutes, or until a toothpick inserted in the center comes out clean.
7. Let the banana bread cool in the pan for 10 minutes before removing it and placing on a wire rack to cool completely.
