1. Origin

Water Kefir cultures, on the other hand, rely solely on microorganisms present in the water itself to begin the fermentation process.

2. Fermentation Process

In kefir fermentation, the microbes in the grains consume lactose (milk sugar) and produce a variety of beneficial metabolites, such as lactic acid, acetic acid, and B vitamins. The resulting product is called milk kefir.

Water kefir, also known as tibicos, use the natural sugars present in the water to ferment, producing a slightly sweet, effervescent beverage rich in probiotics.

3. Taste and Texture

Milk kefir has a thicker consistency than yogurt but is thinner than cottage cheese. It usually has a tangy, slightly sour taste, depending on the length of fermentation.

Water kefir, on the other hand, is often described as having a mildly sweet and effervescent flavor.

Both milk kefir and water kefir provide probiotics, which are beneficial bacteria that support gut health. However, milk kefir also contains calcium, protein, and vitamins A, D, E, and K2, making it a nutrient-dense food.

Water kefir, while rich in probiotics, does not contain the same amount of nutrients found in milk kefir or dairy products.

5. Preparation and Storage

Milk kefir is typically prepared by adding grains to milk and allowing it to ferment for 24-48 hours at room temperature, depending on personal preference. After fermentation, the grains are strained out, and the kefir is refrigerated for up to a week.

Water kefir, on the other hand, requires constant agitation during the fermentation process and must be consumed within 48 hours of preparation to maintain its carbonation and probiotic content.
